Description

Super simple and flavorful onion roasted potatoes for a quick and easy side.


Ingredients

Scale
  • 3-4 large potatoes, depending on the size
  • 2 1/2 Tbs. extra virgin olive oil
  • one package onion soup mix
  • salt and pepper to taste

Instructions

  1. Rinse and scrub potatoes. Do not peel.
  2. Cut potatoes into bite-sized pieces.
  3. Pour potatoes into a medium-sized bowl.
  4. Pour olive oil over potatoes.
  5. Add onion soup mix.
  6. Stir to coat potatoes.
  7. Add to parchment paper lined cookie sheet.
  8. Bake at 425 degrees for 15 minutes.
  9. Turn the potatoes, sprinkle with salt and pepper to taste, and bake for 15 more minutes.
  10. Cooking time may vary. Potatoes should be crispy on the outside and tender on the inside.

Notes

You can swap out white potatoes for sweet potatoes. You can also use other variations of dry onion soup mix such as beefy onion soup mix.
