I’ve been hearing a lot about Crock Pot Swamp Potatoes, and was intrigued by the ingredients, so I gave it a try – it definitely lived up to the hype. The combination of sausage, potatoes, and green beans all seasoned with Creole spices creates a warm, hearty, and comforting meal. Best of all, it’s incredibly easy to make and cooks right in the crock pot.
It’s such a relief when I get to late afternoon, and supper is already cooking and almost done. With everyday ingredients from your pantry, freezer, or refrigerator, Crock Pot Swamp Potatoes comes together effortlessly.
The Swamp Potatoes nickname is inspired by it’s southern roots and the way it looks – much like a bayou at low tide.

Here’s a look at the key ingredients I used for Crock Pot Swamp Potatoes:
- Sausage – I used Country Pleasin’ Sausage, a sausage that is made nearby in Mississippi. It’s hickory-smoked and the seasoning blend is just how we like it. However, you can use your own favorite sausage.
- Potatoes – I like using the small red potatoes or Yukon gold potatoes for the flavor and they also hold together well. You can substitute medium or large potatoes and cut them into chunks.
- Green beans – I used fresh green beans, cut into about 1 inch pieces, but you can use frozen or canned. If canned, drain 1/2 of the liquid.
- Creole seasoning – I used Tony Cachere’s Creole Seasoning, but you can use your favorite creole seasoning.

Description
The combination of sausage, baby potatoes (halved), fresh green beans, onions, and Creole seasoning make a filling, hearty, and spicy dish that won’t disappoint. Layer it all in a crock pot, and let it cook for about 6 hours, and your meal is ready.
Ingredients
- 1.5 - 2 lbs. fresh green beans, cut
- 1.5 lbs. small potatoes, halved
- 1 large onion, diced
- 1 lb. smoked original Country Pleasin' sausage, sliced
- 1/4 cup (1/2 stick) butter
- 1 packet Lipton onion soup mix
- 1 tsp. creole seasoning (I used Tony Cachere's Creole Seasoning.)
- 1 tsp. garlic powder
- 1/2 teaspoon black pepper
Instructions
- Line crock pot with Reynolds Slow Cooker Liner.
- Cut potatoes in half and add to a large crock pot. Season with 1/2 of the seasonings (1/2 pack onion soup mix, 1/2 tsp. creole seasoning, 1/2 tsp. garlic powder, 1/4 tsp. black pepper).
- Cut green beans, and add green beans and diced onion to crock pot. Add the rest of the seasoning.
- Slice sausage and add to crock pot. Top with 1/2 stick of butter. Cover and cook for about 6 hours.
- Stir gently.
- Add more seasoning, if needed.
Notes
- Lining with Reynolds Slow Cooker Liners makes it so much easier to clean up.
- I used Tony Cachere’s Creole Seasoning, but you can use your favorite creole seasoning.
- Use more creole seasoning if you like it spicy, or less if it’s too spicy.
