Description

Fresh blueberries, bright lemon flavor, and a buttery golden topping come together in this incredibly easy dessert! It has all the deliciousness of a blueberry cobbler without all the work. 💛

Just a few simple ingredients, fresh blueberries, and a lemon cake mix—and you’ll have a warm dessert everyone will love.


Ingredients

  • 3 cups fresh blueberries
  • 2 Tbsp. granulated sugar
  • Zest of 1 lemon
  • 1/2 tsp. water
  • 1/2 tsp. cornstarch
  • 1 box lemon cake mix (I used Pillsbury Moist Supreme Lemon Cake Mix.)
  • 1 cup butter

Instructions

  1. Preheat the oven to 350 degrees.
  2. Spray a 9 x 13 inch pan with non-stick cooking spray.
  3. In a bowl, mix 3 cups blueberries with 2 Tbsp. sugar, zest of 1 lemon, 1/2 tsp. water, and 1/2 tsp. cornstarch.
  4. Stir gently until well mixed.
  5. Pour 2 cups of the blueberry mixture into the bottom of the prepared baking dish.
  6. Sprinkle 1 box of the dry cake mix evenly over the blueberries. Spread lightly so that the cake mix covers the blueberry mixture.
  7. Drizzle melted butter over the dry cake mix.
  8. Add 1 cup of the reserved blueberry mixture over the cake mix layer.
  9. Bake for 45-48 minutes or until golden yellow.
  10. Serve warm with a scoop of ice cream.

Notes

  • Best served warm with ice cream, but is also delicious at room temperature or cold.
  • You can use frozen blueberries, if fresh blueberries are not available.  Thaw before using frozen.
