Marry Me Chicken

Golden-brown chicken is smothered in a creamy sun-dried tomato and herb sauce, then served over rice and finished with fresh basil. It’s an easy yet elegant dish that’s worthy of serving to company.

 

Ingredients for the chicken:

  • 10-12 chicken bresast tenderloins
  • salt and pepper
  • all-purpose flour
  • avocado oil
  • butter

For the sauce:

  • 3 cloves minced garlic
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup fresh Parmesan, grated
  • 1 tsp. chili flakes
  • 1/4 tsp. oregano
  • 1/4 tsp. thyme
  • salt and pepper to taste
  • 1/3 cup sundried tomatoes, chopped

Description

Tender chicken is lightly floured and pan-fried until golden brown, then simmered in a rich, creamy sauce made with heavy cream, sun-dried tomatoes, and herbs. Serve the chicken and sauce over rice and garnish with fresh basil for a restaurant-quality meal that’s perfect for family dinners or entertaining guests.


Ingredients

  • 10-12 chicken breast tenderloins
  • Salt and pepper to season the tenderloins
  • 6-8 Tbs. all purpose flour
  • 2 Tbs. avocado oil or olive oil
  • 2 Tbs. butter
  • 3 cloves, garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup fresh parmesan cheese, grated
  • 1 tsp. chili flakes
  • 1/4 tsp. oregano
  • 1/4 tsp. thyme
  • salt and pepper to taste
  • 1/3 cup sundried tomatoes, chopped
  • fresh basil leaves for garnish
  • rice for serving

Instructions

  1. Season the chicken with salt and pepper.
  2. Coat both side of the chicken with flour. Shake off any excess.
  3. Heat the avocado oil and butter in a large skillet over medium heat.
  4. Add the chicken to the skillet, cooking until golden brown on each side. (4-5 minutes)
  5. Transfer the cooked chicken to a plate and loosely cover with foil to keep warm.
  6. Add the garlic to the skillet and cook for a couple of minutes.
  7. Add the chicken broth, and scrape the bottom of the pan with a wooden spoon.
  8. Reduce the heat to medium-low.
  9. Add the heavy cream and the parmesan, and simmer for a few minutes.
  10. Add the chili flakes, thyme, oregano, salt, pepper, and sundried tomatoes.
  11. Add the chicken back to the sauce in the skillet and simmer until sauce has thickened. (About 4-5 minutes)
  12. Serve over rice and garnish with chopped fresh basil.

Notes

  • Marry Me Chicken can be stored in the fridge for up to 3 days. If you need to thin the sauce, just add a little milk or cream.
  • I made this and froze it, and then just thawed in the refrigerator overnight and heated in the oven. You may need to add a little more heavy cream.
