Marry Me Chicken
Golden-brown chicken is smothered in a creamy sun-dried tomato and herb sauce, then served over rice and finished with fresh basil. It’s an easy yet elegant dish that’s worthy of serving to company.
Ingredients for the chicken:
- 10-12 chicken bresast tenderloins
- salt and pepper
- all-purpose flour
- avocado oil
- butter
For the sauce:
- 3 cloves minced garlic
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup fresh Parmesan, grated
- 1 tsp. chili flakes
- 1/4 tsp. oregano
- 1/4 tsp. thyme
- salt and pepper to taste
- 1/3 cup sundried tomatoes, chopped

Description
Tender chicken is lightly floured and pan-fried until golden brown, then simmered in a rich, creamy sauce made with heavy cream, sun-dried tomatoes, and herbs. Serve the chicken and sauce over rice and garnish with fresh basil for a restaurant-quality meal that’s perfect for family dinners or entertaining guests.
Ingredients
- 10-12 chicken breast tenderloins
- Salt and pepper to season the tenderloins
- 6-8 Tbs. all purpose flour
- 2 Tbs. avocado oil or olive oil
- 2 Tbs. butter
- 3 cloves, garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup fresh parmesan cheese, grated
- 1 tsp. chili flakes
- 1/4 tsp. oregano
- 1/4 tsp. thyme
- salt and pepper to taste
- 1/3 cup sundried tomatoes, chopped
- fresh basil leaves for garnish
- rice for serving
Instructions
- Season the chicken with salt and pepper.
- Coat both side of the chicken with flour. Shake off any excess.
- Heat the avocado oil and butter in a large skillet over medium heat.
- Add the chicken to the skillet, cooking until golden brown on each side. (4-5 minutes)
- Transfer the cooked chicken to a plate and loosely cover with foil to keep warm.
- Add the garlic to the skillet and cook for a couple of minutes.
- Add the chicken broth, and scrape the bottom of the pan with a wooden spoon.
- Reduce the heat to medium-low.
- Add the heavy cream and the parmesan, and simmer for a few minutes.
- Add the chili flakes, thyme, oregano, salt, pepper, and sundried tomatoes.
- Add the chicken back to the sauce in the skillet and simmer until sauce has thickened. (About 4-5 minutes)
- Serve over rice and garnish with chopped fresh basil.
Notes
- Marry Me Chicken can be stored in the fridge for up to 3 days. If you need to thin the sauce, just add a little milk or cream.
- I made this and froze it, and then just thawed in the refrigerator overnight and heated in the oven. You may need to add a little more heavy cream.
