Onion Shortcake

Why is this called Onion Shortcake and why is it so good? It’s called shortcake for it’s crumbly and flaky texture. How could this not be delicious with a layer of baked cornbread surrounding a creamy mound of sweet onions and cheese?

This is a classic southern recipe found in old church and community cookbooks. Perfect for potluck, family dinners, or holiday meals – this dish is simple to make, but unforgettable in flavor.

Don’t be fooled by the name- this savory onion shortcake is pure comfort food, and it never fails to have guests asking for the recipe. 

This recipe has 2 layers. The first layer is the cornbread layer made with the cornbread mix, egg, milk and oil. 

The 2nd layer is a mixture of the onion rings, sour cream, mayonnaise, and creamed corn. 

Finally, top off the onion shortcake with a layer of sharp cheddar cheese and bake.

Description

This onion shortcake is a delicious blend of baked cornbread and a rich, creamy filling of sweet onions and cheese. This dish is both rustic and comforting. It’s easy to prepare and you’ll want to go back for seconds.


Ingredients

Units Scale
  • 1 box of Jiffy corn muffin mix
  • 1 egg
  • 1/3 cup milk
  • 2/3 cup oil
  • 8 oz. sour cream
  • 1/2 cup mayonnaise
  • one (14-15 oz.) can creamed corn
  • 2 medium sweet onions, cut into rings
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 350 degrees.
  2. Cut the 2 onions into rings
  3. Mix together the cornbread mix, egg, milk, and oil. Stir until well combined.
  4. Spray 9 x 13 pan with cooking spray.
  5. Pour the cornbread mixture into the 9 x 13 pan and spread evenly.
  6. Mix together the onions, sour cream, mayonnaise, and creamed corn.
  7. Pour the onion mixture over the cornbread mixture.
  8. Sprinkle grated cheese over the top.
  9. Bake in preheated 350 degree oven for 35-40 minutes.

Notes

1. Baking time my vary depending on your oven.

2. I’ve only tried the Onion Shortcake  with the Jiffy corn muffin mix, but would probably work with other brands as well.
