This Rice Cooker Sausage and Peppers is the perfect weeknight dinner! Made with simple ingredients and a few pantry staples, everything cooks together in the rice cooker for an easy, flavorful all-in-one meal. One of my favorite things about this recipe is how easy it is to customize. Add a splash of hot sauce for extra heat, stir in sliced green onions, or make it your own with your favorite vegetables and seasonings.
Ingredients:
- Long grain white rice
- Smoked sausage (I used Country Pleasin’ Original)
- Green bell pepper (or you can use red bell pepper or both)
- Creole seasoning (I used Tony Cachere’s Creole Seasoning.)
- Minced garlic
- Black pepper
- Chicken broth
- Fire roasted diced tomatoes

Description
This easy Rice Cooker Sausage and Rice is the ultimate dump-and-go meal! Simply add smoked sausage, rice, peppers, onions, fire-roasted tomatoes, Creole seasoning, and a few pantry staples to your rice cooker, press start, and let it do all the work. The result is a hearty, flavorful one-pot dinner that’s perfect for busy weeknights.
Ingredients
- 1 cup uncooked white rice
- 1 (14.5 oz.) can chicken broth
- 1 (14.5 oz.) can fire-roasted diced tomatoes
- 2 medium garlic cloves, minced
- 2 tsp. Creole seasoning, (I used Tony Cachere's Creole Seasoning.)
- 1/4 tsp. black pepper
- 1 cup chopped green bell pepper (about 1 medium-sized pepper)
- 1/2 cup chopped sweet yellow onion
- 1 1/2 lbs. smoked sausage (I used Country Pleasin' Original Smoked Sausage.)
- sliced green onions, to garnish
- hot sauce, if desired
Instructions
- Add rice, chicken broth, fire-roasted diced tomatoes, garlic, Tony Cachere’s Creole Seasoning, black pepper, bell pepper, onion, sausage to the bowl of the rice cooker.
- Stir.
- Switch rice cooker on, and cook according to manufacturer’s directions until the rice cooker switches itself off.
- Fluff rice.
- Serve with sliced green onions on top and hot sauce, as desired.
Notes
- I used Country Pleasin’ smoked sausage.
- For the Creole seasoning, Tony Cachaere’s Creole Seasoning was used.
- Add a green salad, or sliced fresh tomatoes and cucumbers with garlic toast to complete the meal.
