When summer brings ripe, juicy tomatoes, crisp cucumbers, and sweet onions, it’s the perfect time to make this classic summer salad. Tossed in a sweet and tangy marinade, it can be prepared a few hours ahead—or even the day before—for a refreshing, flavorful side dish. Stores easily in these glass food storage containers.

- 2 large tomatoes, cut into chunks
- 3 medium cucumbers, peeled and cut into chunks
- 1 onion, sliced and cut into chunks
- 1/2 cup sugar
- 1/2 cup white vinegar
- juice of 1/2 lemon
- 1 teaspoon celery seeds
- 1 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Combine vinegar, sugar, lemon juice, celery seeds, salt and pepper in a jar.
- Cover tightly and shake vigorously.
- Add to a bowl, the tomatoes, cucumbers, and onions.
- Toss the vegetables.
- Pour the marinade over the vegetables and stir.
- Secure the lid and gently flip the container back and forth to distribute the marinade over the vegetables.
- Cover and refrigerate at least 1-2 hours.
Notes
- You can vary the vegetables depending on your preference. Sweet red pepper, for instance would be good in this combination.
- You can add herbs according to taste, such as fresh basil.
- If using English cucumbers, you may choose to leave the skin on since the skin of English cucumbers is thin.
