Description

When summer brings ripe, juicy tomatoes, crisp cucumbers, and sweet onions, it’s the perfect time to make this classic summer salad. Tossed in a sweet and tangy marinade, it can be prepared a few hours ahead—or even the day before—for a refreshing, flavorful side dish. Stores easily in these glass food storage containers. 


Ingredients

  • 2 large tomatoes, cut into chunks
  • 3 medium cucumbers, peeled and cut into chunks
  • 1 onion, sliced and cut into chunks
  • 1/2 cup sugar
  • 1/2 cup white vinegar
  • juice of 1/2 lemon
  • 1 teaspoon celery seeds
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Combine vinegar, sugar, lemon juice, celery seeds, salt and pepper in a jar.
  2. Cover tightly and shake vigorously.
  3. Add to a bowl, the tomatoes, cucumbers, and onions.
  4. Toss the vegetables.
  5. Pour the marinade over the vegetables and stir.
  6. Secure the lid and gently flip the container back and forth to distribute the marinade over the vegetables.
  7. Cover and refrigerate at least 1-2 hours.

Notes

  • You can vary the vegetables depending on your preference. Sweet red pepper, for instance would be good in this combination.
  • You can add herbs according to taste, such as fresh basil.
  • If using English cucumbers, you may choose to leave the skin on since the skin of English cucumbers is thin.
