Ingredients
- 3 cups fresh blueberries
- 2 Tbsp. granulated sugar
- Zest of 1 lemon
- 1/2 tsp. water
- 1/2 tsp. cornstarch
- 1 box lemon cake mix (I used Pillsbury Moist Supreme Lemon Cake Mix.)
- 1 cup butter
Instructions
- Preheat the oven to 350 degrees.
- Spray a 9 x 13 inch pan with non-stick cooking spray.

- Stir gently until well mixed.
- Pour 2 cups of the blueberry mixture into the bottom of the prepared baking dish.

- Add 1 cup of the reserved blueberry mixture over the cake mix layer.
- Bake for 45-48 minutes or until golden yellow.
- Serve warm with a scoop of ice cream.
Notes
- Best served warm with ice cream, but is also delicious at room temperature or cold.
- You can use frozen blueberries, if fresh blueberries are not available. Thaw before using frozen.
