Fresh Pineapple Salsa

I made Sesame Ginger Chicken Quesadillas and wanted a fresh salsa to serve as a topping. This fresh pineapple salsa was the perfect addition to the quesadillas – full of flavor, colorful, sweet, and spicy. This salsa can be very versatile, though.  It’s also incredibly versatile — serve it as an appetizer with chips, a topping for guacamole, fish, or grilled meats, add it to tacos and burritos, spoon it over rice or grain bowls, enjoy it with eggs, or use it in countless other ways.

Fresh ingredients give this salsa an amazing flavor, making it not only delicious, but also colorful and appetizing.

Description

This fresh pineapple salsa begins with sweet, juicy pineapple, then gets a burst of color and flavor from peppers and herbs. A splash of fresh lime juice ties it all together, making it perfect as a topping, dip, or salad addition.


Ingredients

  • 1 fresh medium-sized pineapple, diced (about 3 cups)
  • 1 red bell pepper, chopped
  • 1/2 cup chopped sweet onion
  • 1/4 cup chopped fresh cilantro
  • 1 medium jalapeno, minced ( remove seeds and ribs)
  • 1 large lime, juiced (about 1/4 cup)
  • 1/4 tsp. salt

Instructions

  1. In a serving bowl, combine the prepared pineapple, bell pepper, onion, cilantro, jalapeno, and salt.
  2. Drizzle with the lime juice.
  3. Using a large spoon, stir the ingredients together.
  4. Season to taste with additional lime juice and salt, if needed.
  5. For best flavor, let the salsa rest for 10 minutes or longer before serving.

Notes

  • This salsa is best served fresh, but can be stored in the refrigerator for up to 4 days.
  • Be sure to use fresh ingredients – it’s what give the salsa it’s incredible flavor.
