Description
This fresh pineapple salsa begins with sweet, juicy pineapple, then gets a burst of color and flavor from peppers and herbs. A splash of fresh lime juice ties it all together, making it perfect as a topping, dip, or salad addition.

- 1 fresh medium-sized pineapple, diced (about 3 cups)
- 1 red bell pepper, chopped
- 1/2 cup chopped sweet onion
- 1/4 cup chopped fresh cilantro
- 1 medium jalapeno, minced ( remove seeds and ribs)
- 1 large lime, juiced (about 1/4 cup)
- 1/4 tsp. salt
Instructions
- In a serving bowl, combine the prepared pineapple, bell pepper, onion, cilantro, jalapeno, and salt.
- Drizzle with the lime juice.
- Using a large spoon, stir the ingredients together.
- Season to taste with additional lime juice and salt, if needed.
- For best flavor, let the salsa rest for 10 minutes or longer before serving.

- This salsa is best served fresh, but can be stored in the refrigerator for up to 4 days.
